Tried a new recipe for dinner today

It's been a while since I tried out a new recipe, guess it's been lack of inspiration in a combination of lack of time. Finally tried something other than the regular suspects today, turned out pretty yummy and high on protein for the days when we need some extra of that.

Ingredients:
1 large leek, cleaned and chopped
1 lbs extra lean ground beef
1.5 cups of rice
1 cup of green lentils, rinsed and soaked in water for 10 minutes
3.5 cups of boiling water
1 can of crushed tomatoes

Olive Oil
Salt
Black pepper
Ground cloves
Sambal Oelek or other asian chili paste


Instructions:
In a hot pan, fry half of the chopped leek with the lentils in a little olive oil.
Stir until they start to get some color, about 3-5 minutes.
Pour the lentils and leek mix into a pot with the boiling water, add 1.5 teaspoons of salt.
Let it boil for 10 minutes, while you fry the ground beef.

In a hot pan, add the ground beef and black pepper.
Fry 3-5 minutes while stirring, then add the rest of the leek and fry stirring for another 3 minutes.
Add salt to taste, 1 teaspoon of sambal oelek (or more if you like it hot) and a pinch of ground cloves.
Add the crushed tomatoes and lower the heat. Let is simmer until the rice is ready (about 20 minutes).

Add the rice to the lentil and leek and let it boil simmer at low heat until the rice and lentils are soft, about 20 minutes.

Add more salt, pepper and sambal as wished for. Serve with your favorite side of veggies.
